Why this recipe
It’s summer! Full stop. I have no other reasons.
Oh, wait, also blackberries were 99 cents a pint. 99 cents!
The Recipe
Generally, I make peach cobblers, because it’s my favorite fruit. This was my first berry cobbler, which seems silly as I type this. Per usual, I didn’t trust my instincts (Cobbler recipe: one stick butter, melted, one cup sugar, one cup flour, one cup milk, mix and pour, top with fruit) so I googled a recipe. Pioneer Woman came through yet again. Recipe was exactly as I thought it would be, but she suggested topping with 1/4 cup of sugar after putting everything together. I obliged.
How it went
Cobbler recipes are the easiest baking recipes in the whole world. Easy ingredients, easy to mix, easy to bake. I even feel like it doesn’t really matter what you bake it in (as long as you check it after an hour or so). This is probably not true, but it seems true.
The cobbler was just right — chewy and sweet.
Also, ice cream is a MUST HAVE. The cobbler recipe was technically dairy free — I used plant butter and barista-style oat milk (the best one!) but I had to top it with ice cream. The flavors meld together perfectly.
What I Learned
Trust my instincts. I didn’t need to google a recipe — I knew exactly how to put it together.
